Hey would an app like allow me to be able to replace my aviom system and mix my in ear system from this app?

You certainly could remotely mix ears from the StageMix app. However, you can only have one instance of the app connected to the console at once, so you would not be able to hand out iPads to the band and have them mix their own mixes. If you were to have a monitor engineer on stage talking with each musician about what they needed, it might work quite well.
Just be aware that when you select a channel in StageMix, it also selects it on the console itself. If you are trying to do both FOH and monitor roles at once, you may step on each other.
